initially velvety, developing into a substantial and complex texture which is expressed with an outstanding and bewitching drink ability, fervent, persuasive and dynamic, where singularly silky and well-amalgamated tannins predominate

CHARACTERISTICS:

full-bodied and fleshy, Merlot is a convincing and dense wine, rich and well-balanced, elegant and with a pungent freshness, never tiresome nor excessive, capable of conquering the most demanding of imbibers

TO EAT WITH:

a winner with tagliolini pasta with mushrooms and sausages, rigatoni pasta with hare ragu, and a slab of braised veal prepared with the very same wine. Excellent with a rare and juicy Chianina (T bone). Impeccable with Pecorino di Fossa cheese.
